Zucchini Lasagna

1 large onion, oilve oil, 1 bayleaf, garlic, 1 yellow bell pepper,2 zucchini, 2 large carrots, 1tbsp chicken stock, tomato sauce, cheese, cooked lasagna.

(optional: 3 hard boiled eggs)

In a sauce pan over stove, saute some chopped onion in some olive oil

add a bayleaf and garlic (powder or freshly minced)

add some chopped yellow sweet pepper (or other variety of choice)

add chopped zucchini

add chopped carrots

add some chicken stock

let everything cook for about 5-6min

You then take your cooked veggies and run them through a food mill or blender (to a paste)

this Zucchini  paste is now ready for your lasagna assembly.

Take your cooked lasagna (prepare as directed on package)

layer with the paste, I like to add some cooked (hard boiled) egg, and cheese of  choice. (layer lasagna, layer of past, layer of tomato sauce, egg, cheese, continue..)

Bake in oven for 20 min at 400C (your ingredients are cooked, you are melting the cheese and crisping lasagna)
