Baked Chicken Fries
Suggestion: If you want to make it a meatless Monday lunch, try a veggie tempura instead of the chicken fries. This is also a great way to give some veggies a try such as sweet potato, zucchini, eggplant, broccoli etc.
roasted chicken strips (last nights dinner)
Salt & pepper (to taste)
breadcrumbs (I like to use Panko; a Japanese-style breadcrumb)
2 large eggs
Line a baking sheet/pan with foil for easy clean up. preheat oven at 350c
In a bowl take your chicken strip and coat in olive oil and dip in another bowl with your eggs. I then take my panko (breadcrumbs) and season it with salt and pepper. Roll the chicken strips in the crumbs.
Place the chick in the oven for 15-20 minutes.
