Brie baked sammies

Every Family event, I look forward to my Mother-in-laws baked bries. Hot and crusty with oozing cheese.

Mushroom brie bake (inspired by my mother-in-law)

Take a fresh round bread loaf and cut a large hole on the top. Then remove the top crust you cut out and using your fingers remove the inside of the bread. The idea is to remove the center but not all the way to the bottom. (you want a layered effect starting with bread on the bottom)

In a sauce pan over medium heat, saute a large chopped onion in olive oil. Add your mushrooms. season with salt and pepper to taste.  Once its all golden color about 3-4 set aside to cool.

Pour half of your mushroom mix into the bread loaf and make sure its spread evenly.

Take your round brie and place it into the round bread loaf over the mushrooms. You then take some of the bread you removed from the center of your loaf break up into smaller pieces and place over the brie

Take your remaining mushrooms and onions and pour over the bread. Finally place the crust over top again covering the hole in the loaf. Wrap your bread in some tinfoil, Place on a baking sheet and into the oven at 350C just long enough for the brie to melt. (about 10 minutes)

remove from oven, let it cool for a few minutes. unwrap and slice.

try: adding turkey and cranberry; like a thanksgiving meal.
