Homemade Crackers

Nothing like crackers with some soup or a snack alongside some cheese or dip.

Something about crackers really appeals to kids, so About a year ago while on my own exploration for better healthier snacks, I came across a method of making crackers and breads. I use a dehydrator to make these but you can also make them in the oven.

Very simple way to disguise those veggies that would otherwise get pushed aside of the plate.  All you need is a foodmill/processor or hand blender and veggies of choice.

What you end up with is a flat cracker packed with nutrition.

Here are a few favourites:

Carrot and zucchini crackers

1 cup carrots

1 cup peeled zucchini

1 small onion

1 red pepper

1/2 green pepper

1 garlic clove

1 cup soaked almonds (soak in some water overnight)

1 cup ground flax seeds

salt and pepper to taste

Grind all ingredients in foodmill/processor till very small

Spread paste onto some parchment paper (a few mm thick)

Goes into the oven at 300C  till paste hardens 25-30 minutes (dehydrator @ 115C about 6 hours)

Score your squares or shapes into crackers about 10 minutes into baking for easier breaking up

You can serve these with salsa, hummus, dips or I love to stack some avocado tomato slices and cheese (like a sandwich)
