Lentil Penne with smoked bacon and cheese
A little change from the usual mac and cheese. After my pasta has cooked (about 8minutes) I drain the water and add a little butter (about 1 tbsp) some mozzarella and about 4 cubes of my frozen Squash puree. (makes it really creamy) Then I open a can of lentils, rinse them and add to the penne. Toss everything and for a bit of smokey flavor I throw in about 1/2 cup of bacon bits. Salt and freshly ground black pepper to taste.
Try: Instead of Squash you can add some cauli flower puree
Creamy, Cheesy and a little Crunch!
